Lemon Potatoes

Ingredients:

4-8 Potatoes

1 tbs Oregano

1-2 Fresh lemons

Salt to taste

1/2 Onion (optional)

Olive oil

Directions:

Preheat oven to 350 degrees F.

Slice potatoes into wedges

Pour olive oil into baking pan - enough so potatoes won't dry out

Add oregano and salt to taste - swirl around pan

Add potato wedges

Squeeze lemons over potatoes - potatoes need to cook in the juices

Add remaining ingredients - mix well

If adding onions, slice and add to pan

NOTE:

-If need be, add a little water to the pan or a little more oil; do not let the potatoes dry out.

-For extra flavor let the lemon peels cook with the potatoes.

 

Cook for 1.5-2 hours or until potatoes are soft.

Serves 4-6 people.
